Grape varieties: 50% cabernet franc, 50% grolleau

Type of soils: Clay and schists

Age of the vines: 40 years old in average

Cultivation of the vineyard: Organic vine-growing as to respect the environment and obtain the best organoleptic grapes’ quality. The vines grow on a trellising and on partly grass-covered ground.

Wine-making and maturing: Harvest by hand. After the pressing, fermentation and wine-growing occur in heat-regulated stainless steel tanks. A second fermentation occurs in the bottle, with a 12 month – maturing on laths, followed by a disgorgement.

Wine tasting: This subtle sparkling wine has fine bubbles and shows a floral and fruity freshness.

Best served: Festive wine to be served as an aperitive or to accompany a dessert.
Serving temperature between 8°C and 10°C (46 to 50°F)

Aging potential: 5 years

Vendanges manuelles. Méthode traditionnelle (seconde fermentation en bouteilles). Elevage sur lattes au minimum 18 mois. Brut.
Bulles fines, nez expressif aux notes florales, bouche élégante à la belle fraîcheur.
