Age of the vines: 40 years old in average
Cultivation of the vineyard: Organic vine-growing as to respect the environment and obtain the best organoleptic grapes’ quality. The vines grow on a trellising and on partly grass-covered ground.
Wine-making and maturing: Traditional pelicular maceration. Fermentation in stainless steel heat-regulated tanks. Maturing in French oak barrels for at least a year. Tartaric stabilisation in cold room.
Wine tasting: The grape variety Cabernet franc gives a very pretty garnet colour, aromas of black fruit, a hint of leather and a note of undergrowth. Its meticulous growing in oak barrels for at least a year adds a fine woody, spicy, and licorice-like complexity, which strengthens its fulness in volume and its finish.
Best served: If possible with decanting, at 18°c (64°F), with grilled red meat, game meat and soft cheese. This wine can show some light natural deposit.
Aging potential: 6 to 10 years
