Age of the vines: 40 years old in average
Cultivation of the vineyard: Organic vine-growing as to respect the environment and obtain the best organoleptic grapes’ quality. The vines grow on a trellising and on partly grass-covered ground.
Wine-making and maturing: Direct pressing. Fermentation in stainless steel heat-regulated tanks. Maturing in tanks and French oak barrels for at least a year. Tartaric stabilisation in cold room.
Wine tasting: Made with the noble grape variety chenin, this vintage has all characteristics of ripe berries with aromas of apricot, peach and quince, a touch of linden tree before the woody notes from its maturing in oak barrels appear. Its mouth is both round and fresh, which allows gourmet dish pairings.
Best served with: White fish (raw or cooked), seafood, white meat in sauce and hard cheese (Comté…) or mature goat cheese.
Ideally at about 11-12°C (52-54°F)
